Made with phyllo pastry, done in 30 minutes!
I don’t usually do “no-recipe” recipes, but this phyllo pizza is one of the things wherein you can just let your imagination run free. (TBH, the ingredients listed below are meant to guide you with grocery shopping, but you don’t really need to bring out your kitchen scale for this!)
I’ve always wanted to get into homemade pizza, but let’s be honest—am I really prepared for that rabbit hole? Probably, when I have some extra time on my hands. My R&D brain isn’t ready for the intricacies of authentic pizza dough just yet.
Luckily this idea came to mind.
I had extra phyllo sheets after making Spanakopita, so why not use them as a pizza base instead? Wrap them around some mozzarella sticks and we’ve got homemade stuffed crust (my ultimate comfort food).

Roasted Garlic Tomato Basil Pizza
Category: Breakfast & Snacks
Yield: One 8-inch stuffed crust pizza
Work Time: 10 minutes
Bake Time: 20-25 minutes
INGREDIENTS
Phyllo Stuffed Crust Base
- 8 phyllo sheets, well-thawed*
- 40g garlic cloves, roasted (1 medium garlic head)
- 80g extra virgin olive oil (⅓ cup)
- 15g unsalted butter, softened (1 tbsp.)
- 100g mozzarella block, cut into ½-inch sticks
Pizza Toppings
- Olive oil garlic pasta sauce, or tomato sauce of choice*
- 100g frozen mozzarella, thawed & sliced*
- ½ large salad tomato, thinly sliced*
Garnish
- Burrata, optional*
- Fresh basil leaves
- Fresh cracked black pepper

METHOD
- PREP. Preheat oven to 240C. Spray or lightly brush a large baking pan or pizza tray with oil.
- MIX. In a small bowl, combine roasted garlic cloves, extra virgin olive oil, and unsalted butter. Mix until well-combined. If needed, heat in the microwave for 30 seconds to melt the butter.
- LAYER. On the greased baking pan or pizza tray, lay fully thawed phyllo sheets one by one, generously brushing the roasted garlic olive oil in between. Form a cross (+) and an X two times, for a total of 8 layers that form a rough circle. Check out our TikTok to see how!
- CRUST. Arrange mozzarella sticks on the phyllo, forming a circle. Neatly wrap the edges of the phyllo over the sticks, tucking any loose pastry underneath. Brush generously with more roasted garlic olive oil.
- DOCK. To help the pizza release steam during baking, dock the surface by poking all over with a fork. You can also poke the stuffed crust.
- TOPPINGS. Add several tablespoons of the olive oil garlic pasta sauce, or any seasoned tomato sauce of your choice—enough to lightly cover the entire surface. Add the roasted garlic cloves from the oil used for brushing. Top with slices of mozzarella and salad tomatoes.
- BAKE. Lower the oven heat to 200-210°C. Place the baking tray on the bottom rack and bake pizza for 20 minutes or until crisp and golden brown.
- GARNISH. Transfer pizza to a wire rack to cool slightly. Add fresh basil leaves and top with burrata. Add fresh cracked black pepper. Serve immediately and enjoy!
TIPS
Thaw. Everything. Properly.
While you can assemble and bake this in 30 minutes, make sure you thaw the ingredients beforehand! The phyllo takes about 4 hours to thaw at room temperature, and most frozen mozzarellas and burrata need to thaw overnight in the refrigerator. If you have them fresh instead of frozen, you can skip this!

How to roast garlic?
Just toss them in the airfryer! I roasted mine at 190°C for 30 mins. until softened.
Why use two kinds of mozzarella?
Firm mozzarella is best to keep the shape of the crust, while high-moisture mozzarella slices get perfectly melty and add great flavor to your tomato basil pizza. It also looks great!
Baking time varies.
Every oven is different! It’s always best to use an oven thermometer (I use 3!) to know its actual temperature. You can go between 200-210°C and adjust the heat as it bakes. Don’t worry about the exact time—bake until you’re satisfied with the color and texture!
